Earth Salad

Dear fierce Ones,

This AWESOME salad is what happened after I didn’t have the usual ingredients to make my favorite Greek salad. I literally glow with pride over this one because it is so delicious and healthy.

It is very filling and it serves 6-8  people.


Stacilicious Salad Dressing & Marinade:

1 cup olive oil
1/2 cup red wine vinegar
1 teaspoon sea-salt (add more to taste if desired)
1/2 tsp pepper
1 tablespoon fresh finely chopped Oregano
4 cloves of Garlic minced
1/4 cup of fresh finely chopped  Parsley

TIP: I like to put the salad dressing in a Mason Jar...It acts as a both a measuring cup and container. I save the remainder for my next salad in the fridge. It stores great in the refrigerator for one week. Don't worry if the dressing looks like a congealed mess when you take it out of the fridge. Just take it out before you chop up the salad and by the time you are done it will be at room temp and you can then shake it up to reconstitute the mixture.

3 cups Chopped Kale

1/4 Sundried Tomatoes

3 Finely Grated Carrots (I prefer these to be finely grated because it gives extra moisture and sweetness to the salad)

1 Red Pepper finely chopped

1/4 cup of Pine Nuts to garnish.

1 handful of crumbled Feta Cheese to garnish (eliminate this ingredient if you are vegan or lactose intolerant)

Apply 1 cup of Stacilicious Salad Dressing. 


Mix it all together.

Garnish with Pine Nuts.





TIP: To make this even more filling, you can add 1 cup of cooked quinoa. I like to serve it with roasted rosemary potatoes or a pasta dish.
