Greek Salad 3 Ways

Ingredients:

This salad can be made 3 ways. I like to make it all 3 ways and for freshest taste I start with Classic Greek, followed by the Mixed version and lastly Quinoa Style so that I can eat healthy throughout the week without eating the exact same salad...I like to mix it up and it saves time to prep it all at once initially and then it is easy to eat healthy for the next couple of days!

Dressing

You will need:

Place all ingredients in a Mason jar (or salad dressing container with lid)

1/4 cup chopped fresh organic parsley
3-5 cloves of fresh pressed organic garlic (I love garlic so I use 5)
1 cup extra virgin olive oil
1/2 cup of red wine vinegar
1 tablespoon of sea salt
1 teaspoon of coarse ground black pepper
1 tablespoon of organic dried Oregano

Close jar lid tightly

Shake it up!

1. Classic

You will need:

  • 2 heads of Romaine lettuce chopped
  • 3 Roma tomatoes diced
  • 1 red pepper chopped
  • 1 English cucumber chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup black Kalamata Olives (pitted)

Add all chopped ingredients to a salad bowl

Add Feta, Olives and 1/2 Cup of Salad Dressing and toss together!
ENJOY!

2. Quinoa Style

You will need:

  • 2 cups of organic Quinoa (cooked)
  • 1 diced tomato
  • 1 lemon
  • 1/4 cup fresh chopped parsley

Steps:
Add 1/4 cup fresh chopped parsley
1/2 cup diced tomatoes
1 fresh lemon squeezed
add 1/4 -1/2 a cup of salad dressing (add a little or a lot according to your taste)
toss together and garnish with a small lemon slice and sprig of parsley (if desired)
ENJOY!

3. MIXED STYLE

Just mix em' up! Half a portion of each salad!
